Remove the heart and seeds then cut them into pieces.
Put 1.5 liters of boiling water, pour the quince pieces and boil them for 25 minutes until the fruit is tender.
Drain and pass the coigns to the mixer.
Put the quince puree, the sugar and cook them, for 15 minutes, stirring until the sugar is melted.
Spread the dough obtained on a dish and let it dry for several days.
You can cut the dry dough into pieces.
