Wash the leeks and slice them. Cut the apple into sticks and sprinkle with lemon.
Peel and slice the red onion. Finely chop the chervil. Cook the leeks in boiling salted water for 3 minutes before rinsing them under cold water.
Toast the pine nuts in a pan.
Peel and press the garlic clove, then place it in a salad bowl. Add the mustard, vinegar, and apple juice, and whisk everything together.
Whisk in the olive oil, leeks, apple, onion, chervil and mix.
Serve with pine nuts.
