Peel the shrimp, keeping the last scale and tail.
Pour the flour onto a plate. Season with salt and pepper. Then mix the Parmesan cheese and breadcrumbs on a second plate. Finally, beat the egg in a bowl.
Heat the oil in a frying pan. Meanwhile, pierce each shrimp with a toothpick before rolling it in the flour, then the beaten egg and Parmesan cheese. Dip them into the pan and fry for about 3 minutes.
Serve immediately.
