Chop and cut the shallot into small pieces.
Crumble the canned tuna into a bowl, add the shallot, sprinkle with lemon juice, then add the St Moret.
Mix everything together and add a few drops of Tabasco and a touch of salt, then chill.
Cut slices of bread into 4 and toast them.
Serve the mixture in a bowl, accompanied by slices of sandwich bread.
