Using a knife, peel the garlic cloves and remove the germ.
Drain the olives, anchovies and capers.
Gather all the ingredients in the blender bowl, then mix finely.
Gradually add the olive oil to obtain a homogeneous puree.
Pepper and finish with a few drops of lemon juice.
Let cool in the refrigerator for a few minutes and serve fresh.
