Clean and chop the kidneys then mix with the flesh.
Mix with the eggs, chopped herbs, breadcrumbs soaked in water and cream.
Season then sprinkle with nutmeg and stir the resulting paste until it has become smooth and let it rest for 10 minutes.
Form dumplings and roll them in flour.
Heat some water, add a pinch of salt and then immerse the dumplings.
Remove and drain the dumplings.
Serve with a tarragon sauce for example.
