Start by working the butter into a softened state in a bowl with the oil, custard powder, icing sugar and a pinch of salt.
Add the egg yolks and the whole egg, mix well until smooth.
Add the sifted flour and baking powder. Mix gently with your fingers to avoid developing the gluten and to obtain a sandy texture.
Wrap the dough in plastic wrap and place it in the refrigerator for about 30 minutes.
Preheat the oven to 180°C. Roll out the dough on a floured work surface and cut it into shapes using various cookie cutters.
Arrange the cookies on a baking sheet lined with parchment paper and bake for 10 to 15 minutes, until golden brown.
Let the cookies cool on a wire rack before enjoying.
Place the cookies on a baking sheet lined with baking paper and bake for about 20 minutes at 170°C.
Allow the cookies to cool completely before assembling them with jam or another filling of your choice.
