In a frying pan, caramelize the butter and sugar.
Add the drained sour cherries, stirring for 3 minutes.
Stir in the star anise and cinnamon, then pour in 4 ladles of morello cherry syrup. Let it reduce.
Cut the vanilla in half and collect the seeds.
Beat the liquid cream, then add the icing sugar and vanilla seeds. Whisk well.
Pour the morello cherries into plates, drizzle with juice and decorate with cream.
