Start by boiling a large pot of water for the pasta. Once the water boils, add salt.
Next, cut the bacon slices into small pieces and cook them in a pan.
In a bowl, grate the pecorino and add the butter. Pour in about 120 ml of boiling pasta water and mix everything together.
Once the pasta is cooked, pour it onto plates. Top with the pecorino sauce, scatter with grilled bacon, and season with pepper. Serve immediately.
