Start by preheating the oven to 180°C. Cut the zucchini in half lengthwise, remove the insides, reserve the flesh, and sprinkle salt over the rest. Place in the oven for 15 minutes.
Mash the flesh into a puree, add the chopped garlic and onion, a little salt and mix.
Stuff the zucchini with this mixture and drizzle with oil. Cook for 20 minutes, then let cool.
Meanwhile, cut the cheeses into chunks and place them in the blender bowl. Add the mint leaves, oil, and a pinch of salt, then blend.
Spread the previous mixture over the cooked zucchini. Sprinkle with walnuts and pepper.
