Reduce the chopped shallots with the wine for 15 minutes, season with salt and pepper.
Prepare a roux with the butter and flour, then add the filtered wine and 2 tablespoons of tomato paste. Simmer for 15 minutes, then stir in the crème fraîche and heat through. Season with salt and pepper.
Roll up the ham slices and place them in a baking dish. Cover with aluminum foil. Preheat the oven to 80°C.
Pour the tomato mixture over the ham and bake for a few minutes.
