Start by slicing an onion and fry it in oil for two minutes.
Take some mushrooms that you have previously rinsed under cold water and cut them into strips. Add them to the onion, season with salt and pepper, and let everything simmer for three minutes.
Pour in beer and a stock cube and simmer for 10 minutes.
Meanwhile, bring a pot of salted water to a boil and add the tortellini, following the cooking time indicated on the package.
Once cooked, drain them and place them in a large saucepan. Mix some crème fraîche with mustard and pour over the pasta.
Add the mushroom sauce, mix well and serve hot, sprinkled with Parmesan cheese on top.
