									Cut the pig tails into rounds.
 
  
									In a casserole dish, place pig tails with onion, crushed garlic, crushed tomatoes, salt, pepper, a bay leaf, thyme and saffron.
 
  
									Add water and simmer for one hour after the valve whistles. If using a Dutch oven, you'll need to check for doneness before serving, which can take about an hour longer.
 
  
									Serve with basmati rice.
