Start by preheating the oven to 180°C.
In a bowl, whisk the eggs and whipping cream, and season with salt and pepper.
Place the puff pastry in a buttered mold, prick it. Place rice or dried vegetables on the bottom and bake for 15 minutes.
Once pre-cooked, arrange the Coulommiers slices on the bottom and pour in the cream mixture.
Bake for 30 minutes and serve.
