Boil the potatoes in water for 20 minutes then cut them into pieces.
In a saucepan over medium heat, pour half of the olive oil and add the cumin and mustard seeds. Cook for 2 minutes before adding the garlic and ginger.
Sauté for a few seconds then add the chopped onions and cook for about 3 minutes.
Add the potatoes and sauté for a few more minutes.
Stir in the remaining olive oil and continue cooking until the potatoes are lightly browned.
Add the lupins, spices, and salt. Mix well and cook for 5 minutes.
Add the tomatoes, stir, and cook for another 5 minutes. Serve hot.
