In a frying pan, brown the bacon for a few minutes, then remove it.
In the same pan, melt the butter, then add the chopped potatoes and simmer for 25 minutes.
Spread the bacon and chopped Cantal cheese on top, and let the cheese melt.
Turn the dough, sprinkle with parsley and pepper, then cook for 3 minutes.
