Start by flouring the monkfish cheeks, then brown them in a little oil.
Season them with salt and pepper and cook them for about 10 minutes on each side until the bottom of the pan begins to stick.
Deglaze with a little white wine and add parsley and garlic.
When everything is well fried, add cream and let it thicken.
Serve with rice, green beans or spinach.
