Start by preheating the oven to 180°C.
Oil a dish and place the fish on it. Garnish with tomato and lemon slices, parsley, bay leaf, thyme, pepper, and onion pieces.
Drizzle with olive oil and bake for 10 minutes. Add the white wine and water, then pour over the fish. Bake for one hour.
