Before you begin, preheat your oven to 210°C and brush a baking dish with oil.
Finely chop the parsley, crumble the thyme, and mix them with the breadcrumbs, fleur de sel, cracked pepper, and olive oil. Brush the two racks of lamb with this mixture and place them in the roasting dish. Add the unpeeled garlic cloves.
Place the dish in the hot oven and bake for 20 minutes for medium rare or 25 to 30 minutes for medium rare, depending on your preference.
Once cooked and grilled, remove the racks of lamb from the oven and let them rest for about 10 minutes.
Serve hot.
