To begin, place the chicken in a salad bowl with the chopped onion, rum, 1 tbsp of Colombo, salt, pepper and lemon juice.
Let marinate for 2 hours.
Brown the chicken in the heated oil and add the onion, chopped garlic and parsley.
Sweat them for a few minutes.
Stir in the marinade, carrots, and potatoes, then cover with water. Cook for 40 minutes.
Serve hot.
