Before you begin, preheat your oven to 160°C.
Mix all the ingredients (except the meat) in a blender to obtain a sweet and sour sauce with a hint of ginger.
Make a few cuts in the skin of the lamb breast and brush it with the mixture. Place it in a large glass or ceramic dish with a little oil and two tablespoons of water.
Bake it for 35 minutes at 150°C skin-side down, then turn it over to the bone for another 35 minutes. Remember to mix the marinade well and moisten it regularly with a brush.
Finish with 5 minutes of cooking on the grill setting, skin side down, to obtain a crispy texture.
