Soak the whelks in salted water with wine vinegar for at least an hour.
Wash them and put them in a casserole dish with cold water, a yellow onion, thyme, a cube of shellfish, pepper and salt.
Bring to a boil for 20 minutes and let stand for at least 2 hours.
Rinse the whelks in cold water and store them in the refrigerator.
Serve them with mayonnaise.
