Prepare the yeast by diluting it in 10 centiliter of lukewarm water.
Put the flour in a bowl and pour the yeast into it, then knead by hand to unite the two ingredients.
Add the salt and gradually pour water so as to have a homogeneous paste (about 10 centiliter of water).
Once the mixture is homogeneous, continue to knead on a clean, previously floured worktop. With your hands, stretch the dough and incorporate the mound with soft butter.
By hand, sprinkle the sugar and perform 3 folds according to the length of the dough, so as to enclose the butter.
Cover the dough using a clean cloth and reserve it for about 2 hours.
Make a puff pastry by rotating 45°C with the dough and stretching it twice by hand or with a floured pastry roller. Respect a 10 -minute rest time between the two kneaders.
Spread the dough in a round mold, garnishing the bottom in your hand, then bake for 30 minutes at 200°C.
