To make a sponge cake, pour the egg and the sugar into the bowl of a robot then whip until the preparation is quadrupled in volume.
Outside the robot, pour the flour into the rain while mixing regularly using a wooden spoon.
Preheat the oven to 180°C, then butter a sponge cake and pour the dough. Bake for 30 minutes, checking the cooking with a knife's blade.
Melt the chocolates separately in a bowl in a double boiler.
Mount the liquid cream in whipped cream using an electric mixer or a robot to make the chocolate layers. Then divide it into 3 bowls and mix a variety of chocolate with a whipped cream bowl.
Place a pastry circle around the sponge cake and soak the surface with coffee. Then spread the whipped layers by spacing each layer of an hour's refrigeration time.
Once the layers are compact, keep your cake cool overnight.
Place chocolate shavings on top before serving.
