Grate the 2 lemons zest
Chop the garlic cloves
Brown the garlic in soft and fruity olive oil in a small saucepan
Deglaze the garlic with white wine vinegar when it starts to brown
Add pepper, then set aside
Then boil salted water
Immerse the pasta in boiling salted water and let them cook al dente
When ready, drain them, keeping 5 centilitres cooking water
In a frying pan, pour the pasta, cooking water, deglazed garlic with white wine vinegar and lemon zest
Mix it everything over low heat to warm the preparation
Add a drizzle of olive oil if the dish seems dry
Serve the pasta on the plates and decorate with grated cheese.
