Wash and chop the parsley.
Pour the flour into a dish and flour the soles on each side.
Put 25 grams of butter to melt high fire. Place the soles and cook for 3 minutes over high heat. Turn the sole over and continue cooking for another 3 minutes. Salt.
Melt the butter in a saucepan and add the lemon juice. Mix, cook for 30 seconds and pour over the soles. Decorate with a few chopped flat parsley leaves.
