Finely chop the onions. Then heat the butter in a saucepan, add the chopped onions and cook for 10 minutes, stirring frequently.
Season with salt and pepper. Stir in the sugar and caramelize. Deglaze with the vinegar, add the red wine, and bring to a boil.
Simmer over medium heat until the liquid is absorbed.
Serve.
