Cut the artichoke hearts into small pieces, then add them to a salad bowl.
Cut the cherry tomatoes in half and add them to the salad bowl with the chopped tomatoes and diced mozzarella. Then add the olives.
Pour the olive oil into a bowl, along with the herbes de Provence and the zest of one lime, and mix everything together.
Pour everything into a bowl and mix.
Serve chilled.
