Peel the carrots and potatoes before grating them into a salad bowl.
Finely chop the parsley and add it to the vegetables. Season with salt and pepper.
Heat the olive oil well in a pan.
Once the oil is hot, add the grated vegetables using a spoon to form a patty.
Fry for 3 minutes on each side.
Serve the pancakes hot.
