Start by peeling a garlic clove and crushing it with a fork in a bowl. Pour the vinegar over the garlic and let it sit for 10 minutes. Then add the oils, salt, and pepper.
Take 1/3 of the salad, especially the escarole which is often large, and wash it before cutting it into coarse pieces.
Mix all ingredients well in the salad bowl before serving.
