Start by finely chopping the garlic and onions. In a pan, drizzle with olive oil and cook the chicken over low heat until golden brown. Then add the onions and fry until golden. Once the onions are golden, add the garlic and mix well.
Sprinkle the spices (ginger, turmeric, coriander, and pepper) over the mixture and stir well. Then pour in the coconut milk, add the kaffir lime leaves, and simmer over low heat for about 40 minutes.
