Boil the potatoes whole for 25 minutes. Cut them in half and hollow them out.
Mash the potato pulp. Add 150g of Bleu d'Auvergne cheese, season with pepper, and mix.
Preheat your oven to 200°C. Fill the shells with the cheese mixture.
Sprinkle the shells with the remaining Bleu d'Auvergne cheese and bake for 15 minutes.
