To begin, preheat your oven to a temperature of 200°C in fan mode.
Place two crepes in a round dish. Slice the goat cheese into thin slices and generously cover the crepes with it.
Roll the ham slices and cut them into thin strips. Cover the crepes with another crepe and crack the eggs over the top. Add the ham slices until the surface is completely covered before adding another crepe on top.
In a saucepan, melt the butter over medium heat and add the flour. Mix well and gradually add the milk to the white roux while mixing with a kitchen whisk.
When the béchamel sauce is ready, pour it over the crepe and spread it with a spatula. Cover with the last pancake.
Grate the Emmental cheese into medium shavings into a bowl and sprinkle it on top.
Bake for about 15 minutes in the middle of the oven, checking regularly for cooking.
Serve hot.
