Start by bringing a pot of water to a boil.
Meanwhile, brown the onion in a pot with olive oil, then sear the beef and set aside.
Then add the Molokheya powder off the heat and stir until you get a paste.
Return the pot to low heat and add boiling water to three-quarters of the pot, stirring vigorously.
Simmer for about 45 minutes, then add the meat, onions, spices, garlic, bay leaf, harissa, salt and pepper.
Let everything cook for 2 to 3 hours, regularly monitoring the cooking of the meat.
When you notice olive oil rising to the surface, it means cooking is complete.
