Peel the onion and cut it into thin slices.
In a sauté pan, heat a little oil and add the spices, a pinch of salt, and the onion rings. Cook over medium heat for about 5 minutes, until the onion is tender.
Add the bay leaf and buckwheat grains, then pour in 50 cl of water. Bring the mixture to a boil over high heat, cover, and simmer over medium heat for 15 minutes.
Meanwhile, clean the mushrooms and slice them if necessary, then peel the shrimp.
Add the mushrooms and shrimp to the pan, mix well and continue cooking, covered, for 5 minutes.
Season with pepper and salt, then serve.
