Start by completely removing the skin from the dry sausage, then cut it into slices of about 1 cm and cut them in half again.
Heat a frying pan and degrease the pieces of sausage without adding any fat.
Meanwhile, peel and finely slice an onion and set it aside.
Boil salted water in a saucepan, then drain the sausage pieces in a colander to remove all the rendered fat.
Then return them to the same pan and add the chopped onion. Cook over low heat until the onions are golden, stirring regularly.
Once the water boils, add the spaghetti and cook for 8 to 9 minutes until al dente.
While the pasta is cooking, add the tomato paste to the pan along with the equivalent of half a glass of water.
Mix the meat and onion sauce well. Simmer, stirring regularly, until the pasta is cooked.
Drain the pasta, then arrange it in a dish or directly on the plates with the sausage mixture as a topping.
Season with pepper and serve hot.
