Start by washing the cabbage and cutting it into thin strips.
Grate the carrots and peel and chop the shallot.
In a salad bowl, mix the vegetables.
In a bowl, prepare the dressing by mixing the oil, soy sauce, vinegar, shallot, salt and pepper.
Pour the dressing over the vegetables and let it sit in the refrigerator for 2 hours before serving.
