Take some partridges and 75g of bacon, then lightly brown them in a large pot.
Add vegetables, a bouquet garni, bacon strips, white wine, and stock. Simmer over low heat for 2 hours.
In another pan, cook lentils with bacon.
To serve, place the lentils in the bottom of a deep plate and arrange the partridges on top.
Serve the sauce separately after removing the fat from cooking the partridges.
