Before you begin, preheat your oven to a temperature of 200°C.
Drain the mozzarella ball and cut it into small cubes.
Take 4 ovenproof ramekins and spread a few cubes of mozzarella in the bottom of each ramekin.
Crack an egg into each ramekin and add the remaining mozzarella cubes on top.
In a bowl, mix the tomato paste with liquid crème fraîche, salt and pepper to taste, stir well, then pour the mixture over each preparation.
Sprinkle with chopped fresh parsley.
To bake the ramekins, place them in a dish filled with hot water and place them in the preheated oven. Bake for 8 minutes, until the egg whites are set.
Serve piping hot with bread sticks.
