Peel and chop the white of the new onions.
Chop the tops and strands of chives.
Melt the butter in a pan and brown the onions for a few minutes until golden.
Add the onions and chopped chives. Cook for 3 minutes.
Meanwhile, beat the eggs in an omelet, salt and pepper.
Pour the beaten eggs into the pan and cook for 9 minutes.
Serve.
