If you have frozen cuttlefish, start by defrosting them in the microwave.
Meanwhile, prepare the garlic and shallots by pressing and chopping them respectively.
In a sauté pan or wok over high heat, add a drizzle of olive oil and fry the shallots until the oil is very hot.
Add the cuttlefish and cook until the water has reduced.
Stir in the garlic, parsley, and a little water, then season with salt and pepper. Pour in the white wine and let it reduce.
If you want more sauce, add water and let it reduce well until it becomes a little thick.
Serve with basmati rice.
