									Brown the sturgeon fillets in a pan after salting and peppering them.
 
  
									Add thyme during cooking and remove the fillets from the pan as soon as their flesh turns white. Set them aside.
 
  
									In a saucepan or in the microwave, melt the butter and add the juice of two lemons.
 
  
									Coat the sturgeon fillets with this sauce and serve with fresh pasta as a side dish.
