Before starting, preheat the oven to 210°C for 10 minutes.
Soften the butter and chop the garlic after peeling it.
Chop the parsley and mix it with the butter and garlic. Add the herbes de Provence, crushed green peppercorns, mustard, and a tablespoon of breadcrumbs.
Salt the fillet and place it in a dish, then drizzle with olive oil and bake for 15 minutes.
Remove the cooking juices after this time and let the meat rest for 10 minutes before removing it from the dish.
Deglaze the juices from the sides with water and mix everything together to obtain a sauce that you will set aside.
Return the roast to the dish and brush it with the flavored butter before covering it with the remaining breadcrumbs.
Bake for 5 minutes until golden.
