For 4 people
Cut the apricots in 4 and put them in a large bowl
Add the sugar, vanilla sugar and lemon juice and mix
Cover your salad film with food or clean linen
Leave your preparation to macerate an entire night at room temperature
Pour everything into a jam bowl the next day and cook for about 60 minutes
If the few drops that you will place on a cold plate freeze, your jam is ready for the box
Store your jars of jam in the fridge until tasting.
