In a bowl, pour the black wheat flour then form a well in the center. Add the egg, milk and coarse salt
Gently mix in the center with a spatula and incorporate the flour on the sides in a gradual way until a thick and homogeneous paste is obtained
Gradually pour the water then mix until you get a smooth paste
After covering the bowl with a cloth, let stand in the refrigerator for at least 30 minutes
Place a non-stick skillet on high heat after having buttered it
Once the pan is hot, pour a ladle of pancake dough, making sure to distribute it all over the surface
Use a spatula to turn the pancake. After letting it cook for 2 to 3 minutes, set aside between 2 plates
Garnish your pancakes with ham, cheese or egg.
