If you do not use an ice turbine, prepare the pulp with the syrup the day before so that it can cool in the refrigerator
If the raspberries are frozen, let them thaw completely. Go to the next step if they are cool. If you use a seedless pulp, go directly to preparing syrup
Pass the raspberries in a blender to obtain a pulp
Go to the sieve or through a colander to separate the juice from the seeds
After bringing the water and the sugar to a boil, pour the syrup over the raspberry pulp, then mix
Reserve in the refrigerator
If you have an ice cream turbine, turn the sorbet when the mixture is still warm. On the other hand, if you use a sorbetic, turn it when the mixture is at 4°C.
