Peel the onion and carrots, then wash them. Cut them into dice.
Rinse the lenses and drain them. Peel the garlic clove, degem it and chop it.
Pour 2 tablespoons of olive oil in a pan and brown the chopped onions for a few minutes.
Then add the tomato concentrate, garlic, cumin, paprika, turmeric, cayenne pepper, cinnamon and lenses. Mix
Then add the diced carrots then wet with about 750ml of water and cook between 30 and 40 minutes. Add water at the end of cooking if necessary.
Before serving, add chopped parsley, taste and season with a little salt and pepper.
