Cut the cute fillet into slices about 2 cm thick. Melt the butter in a pan over high heat with the thread on all sides. Allow about 1 to 2 minutes on each. When the slices are golden brown, simmer for 5 minutes.
Add the fresh cream and mustard. Mix and cook for 2 more minutes. Then sprinkle with a few thyme pluits.
