Peel the potatoes and cook them. Go to the vegetable mill. Add a pinch of nutmeg, salt and pepper. Do the same with apples.
Cut the onions and melt them in the pan. Remove the skin from the black sausage and cook in with a little salted butter. Add the onions to it and cook for another 5 minutes. Lightly butter a gratin dish.
Put a layer of potato puree. Add a layer of compote. Then put the sausage mixed with onions.
Return a layer of puree and a layer of compote. Add grated cheese and go in the oven to make you get scratched.
