Put all the ingredients in the robot bowl by adding by adding 125 milliliters of lukewarm water and knead until you get a flexible paste. You can also knead by hand until you always get the same consistency.
Once the dough has been formed, put it in a bowl, cover it and let lift about 1:30 at room temperature.
Turn over the dough on the floured work surface. Expel the air from the dough and flatten the dough but leave the edges a little thicker.
Place the dough on a baking sheet. Let rise for 15 minutes, then garnish it.
Put 3 tablespoons of tomato sauce and spread. Drizzle with a tablespoon of olive oil. Then divide 75 grams of mozzarella over the tomato and sprinkle with a few chopped basil leaves.
Bake for 9 minutes of cooking in an oven preheated to 230°C, rotating heat. The cheese must boil. At the exit of the oven, again put a few fresh basil leaves.
